Ingredients

  • 1 1/2 cups (190g)  whole wheat flour + 1-2 Tbsp for dusting the berries

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 1/2 cup (115g) unsalted butter, softened

  • 1 cup (200g) sugar

  • 2 large eggs

  • 1/2 cup (120ml) milk

  • 1 tbsp lemon zest (about 1 large lemon)

  • 2 tbsp lemon juice

  • 1 cup (150g) fresh blueberries (you can use frozen, just don’t thaw them)

Directions

  • Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan, or line it with parchment paper.
  • Coat the berries: Coat blueberries with 1-2 Tbsp flour and set aside.
  • Mix dry ingredients: In a medium bowl, sift and whisk together the flour, baking powder, and salt. Set aside.
  • Cream the butter and sugar: In a large bowl, beat the softened butter and sugar until light and fluffy.
  • Add eggs: Beat in the eggs one at a time until well combined.
  • Add Lemon Juice and zest: Gently fold in the lemon zest and juice.
  • Fold in the berries: Gently fold in the blueberries. Be careful not to crush the blueberries.
  • Combine wet and dry ingredients: Gradually add the flour mixture to the butter mixture, alternating with the milk, beginning and ending with the flour mixture. Mix just until combined; do not overmix.
  • Bake: Pour the batter into the prepared loaf pan and spread it evenly. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. 
  • Cool: Allow the loaf to cool in the pan for about 15 minutes before taking it out and serving.
